- 2 cups cooked basmati rice
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 tablespoons ToJMi Spicy Mango Pickle
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- Salt to taste

Instructions

Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.

Add chopped onions and sauté until translucent. Add minced garlic and cook for another minute.

Add turmeric powder and mixed vegetables. Cook for 5-7 minutes until vegetables are tender.

Add cooked rice and mix well. Season with salt to taste.
